Beets only take 3 minutes at high pressure in the pressure cooker. Amazing. And if you have great beets like those, you can’t go wrong.

Seems something magical happens when beets are blended with a slightly sweetened citrus dressing….By the way, Ernie’s ramping up the farm stand hours and we’ll be open Wednesdays and Saturdays from 8am to noon through summer now – so, perhaps you can make it by for a visit soon. What a treat to have Shelton’s Market Gardens right down the road from us! Lila and I stopped by today for an introductory tour and loaded up on two kinds of kale, two kinds of beets, gorgeous zucchinis and a giant head of sweet red butter lettuce, part of which we enjoyed tonight for dinner … yummmm!
